Ingredients

  • 4 medium zucchini
  • 1 cup burrata cheese
  • 1/2 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh basil, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini lengthwise and scoop out the centers to create rolls.
  3. In a bowl, mix burrata cheese, chopped basil, salt, and pepper.
  4. Fill each zucchini half with the burrata mixture and roll tightly.
