Description

A delightful and cozy dinner option featuring juicy chicken breasts stuffed with a savory mix of cranberries, spinach, and Swiss cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup Swiss cheese, shredded
  • 1/2 cup dried cranberries, chopped
  • 1/4 cup cream cheese, softened
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the spinach, Swiss cheese, dried cranberries, and cream cheese.
  3. Cut a pocket into each chicken breast and stuff them with the spinach and cheese mixture.
  4. Season the outside of the chicken breasts with olive oil, salt, and pepper.
  5. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
  6. Remove from the oven and let rest for a few minutes before serving.
