- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1 cup Swiss cheese, shredded
- 1/2 cup dried cranberries, chopped
- 1/4 cup cream cheese, softened
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the spinach, Swiss cheese, dried cranberries, and cream cheese.
- Cut a pocket into each chicken breast and stuff them with the spinach and cheese mixture.
- Season the outside of the chicken breasts with olive oil, salt, and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
- Remove from the oven and let rest for a few minutes before serving.
