Description

This dish is a flavorful combination of tangy cranberries and fresh spinach, stuffed inside juicy chicken breasts and topped with Parmesan for a delicious meal.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries, chopped
  • 1 cup shredded Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add spinach and cook until wilted. Remove from heat and stir in cranberries and half of the Parmesan cheese.
  4. Cut a pocket in each chicken breast and fill with the spinach and cranberry mixture.
  5. Season the outside of the chicken with salt and pepper, then place them in a baking dish.
  6. Top with the remaining Parmesan cheese.
  7. Bake for 25-30 minutes or until the chicken is cooked through.

Notes

  • For added flavor, marinate the chicken breasts for at least an hour before stuffing.
  • Feel free to substitute other types of cheese based on your preference.
