Description
This dish is a flavorful combination of tangy cranberries and fresh spinach, stuffed inside juicy chicken breasts and topped with Parmesan for a delicious meal.

- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup dried cranberries, chopped
- 1 cup shredded Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add spinach and cook until wilted. Remove from heat and stir in cranberries and half of the Parmesan cheese.
- Cut a pocket in each chicken breast and fill with the spinach and cranberry mixture.
- Season the outside of the chicken with salt and pepper, then place them in a baking dish.
- Top with the remaining Parmesan cheese.
- Bake for 25-30 minutes or until the chicken is cooked through.
Notes
- For added flavor, marinate the chicken breasts for at least an hour before stuffing.
- Feel free to substitute other types of cheese based on your preference.
