 - 1 pound ground beef or Italian sausage
 - 4 cups chicken or beef broth
 - 1 can (14.5 ounces) diced tomatoes
 - 1 can (15 ounces) tomato sauce
 - 2 tablespoons tomato paste
 - 1 teaspoon Italian seasoning
 - 1/2 teaspoon dried basil
 - Salt and pepper, to taste
 - 8 lasagna noodles, broken into pieces
 - 1 cup ricotta cheese
 - 1 cup shredded mozzarella cheese
 - 1/2 cup grated Parmesan cheese
 - Fresh basil or parsley, chopped, for garnish (optional)
 
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef or Italian sausage, cooking until browned, and drain excess fat.
 - Add diced onion, cooking until softened. Stir in garlic and cook until fragrant.
 - Pour in broth, diced tomatoes, tomato sauce, and tomato paste. Add Italian seasoning, basil, salt, and pepper. Bring to a boil, then simmer.
 - Add lasagna noodles, cooking until tender.
 - In a small bowl, mix ricotta, half the mozzarella, and half the Parmesan.
 - Serve soup with a dollop of the cheese mixture, topped with additional mozzarella, Parmesan, and fresh basil if desired.
