- 1 pound beef sausage
- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 2 teaspoons dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, and sauté until soft.
- Add the beef sausage and cook until browned.
- Stir in the diced potatoes and beef broth, bringing the mixture to a boil.
- Reduce heat and let it simmer for about 20 minutes or until the potatoes are tender.
- Stir in the heavy cream and dried thyme. Cook for an additional 5 minutes.
- Season with salt and pepper to taste. Serve hot.
Notes
- This soup can be thickened by mashing some of the potatoes.
- For added flavor, consider using smoked sausage.
