Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/3 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs, then stir in coconut milk and vanilla.
  4. Combine wet and dry ingredients, then fold in shredded coconut.
  5. Spread the batter evenly on the prepared baking sheet and bake for 12-15 minutes.
  6. Once baked, remove from oven and let cool for a few minutes.
  7. Roll the cake with the parchment paper, let it cool completely, then unroll and fill with whipped cream or frosting.
