- 1 cup shredded coconut
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, beat eggs, then stir in coconut milk and vanilla.
- Combine wet and dry ingredients, then fold in shredded coconut.
- Spread the batter evenly on the prepared baking sheet and bake for 12-15 minutes.
- Once baked, remove from oven and let cool for a few minutes.
- Roll the cake with the parchment paper, let it cool completely, then unroll and fill with whipped cream or frosting.
- Roll back up and refrigerate for at least 1 hour before serving.
