- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup mushrooms, sliced
- 5 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat and add the mushrooms. Sauté until they are golden brown.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Add the spinach and feta cheese to the egg mixture, followed by the sautéed mushrooms. Stir gently to combine.
- Pour the mixture into a greased pie dish or baking pan.
- Bake for 30-35 minutes or until the center is set. Let cool for a few minutes before slicing.
