Description

This Classic Spinach & Feta Crustless Mushroom Quiche is a delicious and healthy alternative to traditional quiches. With a savory blend of spinach, feta, and mushrooms, it’s perfect for breakfast, lunch, or dinner.


Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mushrooms, sliced
  • 5 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat and add the mushrooms. Sauté until they are golden brown.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Add the spinach and feta cheese to the egg mixture, followed by the sautéed mushrooms. Stir gently to combine.
