- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 3 (8-ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 2 large eggs
- 3 ripe bananas, sliced
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1/2 teaspoon banana extract (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese and granulated sugar together until smooth. Add the vanilla extract and mix well.
- Add the eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set. Let it cool completely.
- Once cooled, spread the sliced bananas over the top of the cheesecake.
- In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form. Spread the whipped cream over the bananas.
- Refrigerate for at least 4 hours before serving.
