- 3 cups peeled and diced apples

Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the flour, baking soda, cinnamon, and salt.
- In another bowl, cream together the sugar and butter until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture and stir until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the diced apples and walnuts if using.
- Pour the batter into a greased 9×13 inch baking pan.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
