Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice and zest of 2 limes
  • 1 lb (450g) large shrimp, peeled and deveined
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • Optional: pinch of red pepper flakes for heat

Instructions

  1. In a bowl, combine shrimp, olive oil, garlic, lime juice and zest, cumin, chili powder, salt, and pepper.
  2. Toss shrimp to coat and marinate for 10–15 minutes.
  3. Heat a skillet over medium-high heat. Add shrimp (discard marinade) and cook 2–3 minutes per side until pink.
  4. Remove from heat and toss with fresh chopped cilantro.
  5. Serve immediately with rice, in tacos, or over salad.

Notes

  • Don’t over-marinate the shrimp—acid can break it down.
  • Use fresh lime juice and zest for maximum flavor.
  • Frozen shrimp works well—just thaw and dry before marinating.
  • Add smoked paprika for extra depth.
