- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Juice and zest of 2 limes
- 1 lb (450g) large shrimp, peeled and deveined
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
- Optional: pinch of red pepper flakes for heat
Instructions
- In a bowl, combine shrimp, olive oil, garlic, lime juice and zest, cumin, chili powder, salt, and pepper.
- Toss shrimp to coat and marinate for 10–15 minutes.
- Heat a skillet over medium-high heat. Add shrimp (discard marinade) and cook 2–3 minutes per side until pink.
- Remove from heat and toss with fresh chopped cilantro.
- Serve immediately with rice, in tacos, or over salad.
Notes
- Don’t over-marinate the shrimp—acid can break it down.
- Use fresh lime juice and zest for maximum flavor.
- Frozen shrimp works well—just thaw and dry before marinating.
- Add smoked paprika for extra depth.
