- 4 boneless, skinless chicken thighs
- Salt & black pepper, to taste
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 2 tbsp unsalted butter (for sauce)
- 2 tbsp honey
- Zest and juice of 1 lemon
- 1 garlic clove, minced
- 2–3 sprigs fresh thyme
- 2 ripe peaches, sliced
- Optional: 1/4 cup chicken broth or white wine
Instructions
- Season chicken with salt and pepper.
- Sear chicken in olive oil and butter until golden, about 5-6 minutes per side. Remove from skillet.
- In same skillet, melt butter and sauté garlic until fragrant. Add lemon zest, juice, and honey. Stir in thyme.
- Add peaches and cook 2-3 minutes until tender. Thin sauce with broth or wine if needed.
- Return chicken to skillet, spoon sauce over, and simmer 2 minutes. Garnish with fresh thyme and serve.
