- 4 boneless, skinless chicken breasts
- 2 ripe peaches, sliced
- 1 tablespoon fresh thyme, chopped
- 1/4 cup honey
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken and cook until golden brown on both sides, about 6-7 minutes per side.
- While the chicken is cooking, in a small bowl, mix together honey, lemon juice, thyme, and a pinch of salt.
- Once the chicken is cooked through, add the sliced peaches to the skillet.
- Pour the honey-thyme mixture over the chicken and peaches, and let it simmer for 5 minutes.
- Serve the chicken topped with the peach and sauce mixture.
Notes
- For a spicier kick, add a pinch of cayenne pepper.
- Serve with steamed vegetables or rice for a complete meal.
