Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced
  • 1 tablespoon fresh thyme, chopped
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken and cook until golden brown on both sides, about 6-7 minutes per side.
  3. While the chicken is cooking, in a small bowl, mix together honey, lemon juice, thyme, and a pinch of salt.
  4. Once the chicken is cooked through, add the sliced peaches to the skillet.
  5. Pour the honey-thyme mixture over the chicken and peaches, and let it simmer for 5 minutes.
  6. Serve the chicken topped with the peach and sauce mixture.
