- 4 boneless, skinless chicken breasts
- 8 oz mushrooms, sliced
- 3 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil or butter
- 1/2 tsp dried thyme or Italian seasoning
- Salt and pepper, to taste
- Optional: 1/4 tsp red pepper flakes
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper. Sear them in olive oil or butter for 3-4 minutes per side until golden. Set aside.
- In the same skillet, sauté mushrooms until browned. Add garlic and cook for 1 minute. Stir in spinach until wilted.
- Pour in heavy cream, Parmesan, and seasoning. Simmer until slightly thickened.
- Return chicken to skillet, spoon sauce over, and top with mozzarella.
- Bake for 20–25 minutes until chicken reaches 165°F (74°C) and cheese is bubbly.
- Let rest 5 minutes before serving.
