  • 8 oz mushrooms, sliced
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil or butter
  • 1/2 tsp dried thyme or Italian seasoning
  • Salt and pepper, to taste
  • Optional: 1/4 tsp red pepper flakes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper. Sear them in olive oil or butter for 3-4 minutes per side until golden. Set aside.
  3. In the same skillet, sauté mushrooms until browned. Add garlic and cook for 1 minute. Stir in spinach until wilted.
  4. Pour in heavy cream, Parmesan, and seasoning. Simmer until slightly thickened.
  5. Return chicken to skillet, spoon sauce over, and top with mozzarella.
  6. Bake for 20–25 minutes until chicken reaches 165°F (74°C) and cheese is bubbly.
  7. Let rest 5 minutes before serving.
