Description

A quick and easy Chicken Scampi Pasta featuring juicy chicken, garlic butter lemon sauce, colorful bell peppers, and Parmesan cheese tossed with linguine.


Ingredients

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 12 oz linguine or spaghetti
  • 1 lb chicken tenders or breast, cut into strips
  • 1/2 cup all-purpose flour
  • 3 tbsp olive oil, divided
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup white wine (or chicken broth)
  • Juice of 1 lemon (about 2 tbsp)
  • 1/2 cup chicken broth (extra if no wine)
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Cook pasta in salted water until al dente. Reserve 1/2 cup pasta water. Drain and set aside.
  2. Mix flour with salt, pepper, and paprika. Dredge chicken in flour mixture.
  3. Heat 2 tbsp olive oil and 2 tbsp butter in a large skillet. Cook chicken 4–5 mins per side until golden and cooked through. Remove and keep warm.
  4. In the same skillet, sauté bell peppers and onion in remaining olive oil until tender. Add garlic and cook 1 minute.
  5. Deglaze skillet with wine or broth, add lemon juice, broth, red pepper flakes, and remaining butter. Simmer 3–4 mins.
  6. Add pasta, toss to coat with sauce. Use reserved pasta water for desired consistency. Stir in Parmesan and parsley.
  7. Top with chicken. Serve hot with extra Parmesan and parsley.

Notes

  • Use shrimp instead of chicken for a classic variation.
  • Add spinach or asparagus for extra greens.
  • Gluten-free pasta and flour work just fine.
  • Adjust red pepper flakes to control spice level.
