Description

This Chicken, Mushroom & Cheese Quiche is the perfect savory bake—creamy eggs, tender chicken, sautéed mushrooms, and melted cheese in a flaky crust. Great for brunch, family dinner, or meal prep.


Ingredients

  • 1 cup cooked chicken, diced
  • 1 cup mushrooms, sliced
  • 1 small onion, finely chopped
  • 1 9-inch pie crust (store-bought or homemade)
  • 1 cup shredded cheese (cheddar, Swiss, or Gruyère)
  • 3 large eggs
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp Dijon mustard (optional)
  • Salt & pepper to taste
  • 1 tsp fresh thyme or parsley, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Place pie crust into 9-inch dish.
  2. Sauté mushrooms and onions in butter or olive oil until tender and golden. Add chicken and cook for 1–2 minutes. Let cool slightly.
  3. In a bowl, whisk eggs, cream, mustard (if using), salt, pepper, and herbs.
  4. Spread chicken mixture in crust, top with cheese, then pour over the egg mixture.
  5. Bake for 35–40 minutes, until the center is set and top is golden.
  6. Let cool 5–10 minutes before slicing. Serve warm or at room temperature.
