  • 3 tablespoons unsalted butter, divided
  • 8 ounces cremini or button mushrooms, sliced
  • ⅔ cup chicken broth
  • ⅔ cup heavy cream
  • 2 teaspoons chopped fresh thyme
  • Fresh parsley, chopped (for garnish)

Instructions

  • Season and dredge the chicken in flour.
  • Sear chicken in a skillet with olive oil and butter until golden brown; set aside.
  • Sauté mushrooms, shallots, and garlic in the same skillet.
