- 2 cups cooked chicken, shredded
- 1 can corn, drained
- 1 package cornbread mix
- 1 cup milk
- 2 eggs
- 1 cup cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, corn, garlic powder, onion powder, and half of the cheese.
- In another bowl, mix the cornbread mix, milk, and eggs until just combined.
- Grease a baking dish and layer the chicken mixture at the bottom.
- Pour the cornbread batter over the chicken mixture and spread evenly.
- Bake for 30-35 minutes or until the cornbread is golden brown.
- Remove from the oven, sprinkle the remaining cheese on top, and bake for an additional 5 minutes until the cheese is melted.
- Let it cool slightly before serving.
Notes
- Feel free to add your favorite vegetables for extra flavor.
- This casserole can also be made ahead of time and stored in the refrigerator.
