Ingredients

  • 4 chicken thighs
  • 1 pound baby potatoes
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Season chicken thighs with salt and pepper, then brown them on both sides.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and stir in the Parmesan cheese until smooth. Place the baby potatoes around the chicken in the skillet.
  5. Transfer the skillet to the oven and bake for 25-30 minutes or until chicken is cooked through and potatoes are tender.
  6. Remove from the oven, garnish with fresh parsley, and serve warm.
