- 2 large eggs, beaten

- 1 cup shredded mozzarella cheese

Instructions
- Sprinkle zucchini sticks with salt and let sit for 10 minutes. Pat dry thoroughly.
- Prepare breading station: flour in one bowl, beaten eggs in another, and breadcrumbs mixed with Parmesan and seasonings in a third.
- Dredge each zucchini stick in flour, then egg, then breadcrumb mixture.
- Place on parchment-lined baking sheet and spray lightly with olive oil.
- Bake at 425°F (220°C) for 15–20 minutes, flipping halfway through.
- Sprinkle mozzarella on top in the last 3 minutes of baking if desired.
