- 4 large russet potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 can black beans, drained and rinsed
Instructions
- Preheat the oven to 400°F (200°C).
- Bake the potatoes for about 45 minutes or until tender.
- In a skillet, cook the ground beef until browned, then add the taco seasoning and black beans.
- Once the potatoes are done, cut them in half and scoop out a bit of the flesh.
- Mix the potato flesh with the beef mixture and fill the potato skins.
- Top with cheddar cheese and return to the oven until the cheese is melted.
- Serve topped with sour cream and green onions.
