Description

Ingredients

  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 can black beans, drained and rinsed


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the potatoes for about 45 minutes or until tender.
  3. In a skillet, cook the ground beef until browned, then add the taco seasoning and black beans.
  4. Once the potatoes are done, cut them in half and scoop out a bit of the flesh.
  5. Mix the potato flesh with the beef mixture and fill the potato skins.
  6. Top with cheddar cheese and return to the oven until the cheese is melted.
  7. Serve topped with sour cream and green onions.
