- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Heat olive oil in a skillet over medium heat.
- Add spinach and sauté until wilted.
- In a bowl, mix together the sautéed spinach, feta, mozzarella, garlic powder, black pepper, and salt.
- Place a tortilla in the skillet, add some of the cheese mixture, and top with another tortilla.
- Cook until the bottom is golden brown, then flip and cook the other side.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve hot.
Notes
- For extra flavor, consider adding chopped onions or bell peppers to the filling.
- Serve with salsa or guacamole for dipping.
