Description

These Cheesy Spinach & Feta Quesadillas are the perfect combination of comfort food and quick cooking. They’re packed with flavor and nutrients, making them an excellent choice for a hearty meal.


Ingredients

Scale
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add spinach and sauté until wilted.
  3. In a bowl, mix together the sautéed spinach, feta, mozzarella, garlic powder, black pepper, and salt.
  4. Place a tortilla in the skillet, add some of the cheese mixture, and top with another tortilla.
  5. Cook until the bottom is golden brown, then flip and cook the other side.
  6. Repeat with the remaining tortillas and filling.
  7. Cut into wedges and serve hot.
