- 2 cups grated potatoes
- 1 cup chopped spinach
- 4 eggs
- 1 cup shredded cheese
- 1/2 cup chopped turkey bacon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the grated potatoes, chopped spinach, and chopped turkey bacon.
- In another bowl, whisk the eggs and add the cheese, salt, pepper, garlic powder, and onion powder.
- Mix the egg mixture with the potato mixture until well combined.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes until set and golden on top.
- Let it cool for a few minutes before slicing and serving.

- Feel free to add other vegetables like bell peppers or mushrooms.
