Description

This hearty, low-carb Cheesy Comfort Zucchini & Beef Bake features layers of tender zucchini, rich beef, and gooey cheese. It’s simple, satisfying, and perfect for any weeknight meal or potluck gathering.


Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup marinara or tomato sauce
  • 1 lb ground beef
  • 2 medium zucchini, sliced
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13” baking dish with 1 tbsp olive oil.
  2. In a skillet, heat 1 tbsp olive oil, sauté onions and garlic for 2–3 minutes.
  3. Add ground beef and Italian seasoning. Cook until browned, then stir in marinara. Season with salt and pepper.
  4. In a separate pan, lightly sauté zucchini slices for 2–3 minutes.
  5. Layer half the zucchini, then half the beef mixture, and half the mozzarella. Repeat layers and finish with Parmesan on top.
  6. Bake for 20–25 minutes or until cheese is bubbly and golden. Let it rest for 5–10 minutes before serving.

Notes

  • For less moisture, salt zucchini and blot dry before layering.
  • Use ground turkey or mushrooms for a lighter version.
