- 1 pound chicken breast, diced
- 4 tablespoons garlic butter
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- salt to taste

Instructions
- Preheat the oven to 400°F (200°C).
- Cook spaghetti according to package instructions; drain and set aside.
- Toss the mixed veggies with olive oil, salt, and pepper; spread on a baking sheet and roast for 20 minutes.
- In a skillet, melt garlic butter over medium heat; add chicken and cook until no longer pink.
- Add the roasted veggies and cooked spaghetti to the skillet; mix well.
- Sprinkle mozzarella cheese on top and let it melt.
