Description

This Cheesy Chicken Enchilada Casserole is a comforting dish that’s perfect for family dinners, packed with flavor and easy to prepare.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn
  • 2 cups shredded cheese
  • 10 tortillas


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine chicken, enchilada sauce, black beans, corn, and half of the cheese.
  3. Spread a layer of the mixture on the bottom of a baking dish and top with tortillas.
  4. Repeat layers until all ingredients are used, finishing with cheese on top.
  5. Bake for 30 minutes until the cheese is bubbly and golden.

Notes

  • You can add jalapeños for extra heat.
  • Substituting turkey for chicken works well too.
