This Cheesy Chicken Enchilada Casserole is a comforting dish that’s perfect for family dinners, packed with flavor and easy to prepare.

- 2 cups cooked shredded chicken
- 1 can (10 oz) enchilada sauce
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn
- 2 cups shredded cheese
- 10 tortillas
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine chicken, enchilada sauce, black beans, corn, and half of the cheese.
- Spread a layer of the mixture on the bottom of a baking dish and top with tortillas.
- Repeat layers until all ingredients are used, finishing with cheese on top.
- Bake for 30 minutes until the cheese is bubbly and golden.
Notes
- You can add jalapeños for extra heat.
- Substituting turkey for chicken works well too.
