Description

A delicious and easy recipe for cheesy baked zucchini topped with turkey bacon, perfect for a comforting meal.


Ingredients

  • 4 medium zucchinis
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 6 strips turkey bacon, cooked and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out some of the flesh to create space for the filling.
  3. In a bowl, combine the mozzarella, Parmesan, turkey bacon, garlic powder, Italian seasoning, salt, and pepper.
  4. Fill the zucchini halves with the cheese and turkey bacon mixture.
  5. Place the stuffed zucchinis on a baking sheet and bake for 25-30 minutes, until the cheese is bubbly and golden.
  6. Remove from oven and let cool slightly before serving.

Notes

  • For added flavor, sprinkle some red pepper flakes on top before baking.
