- 2 boneless, skinless chicken breasts
- 1 cup mushrooms, sliced
- 1 cup Madeira wine
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium heat and add the chicken. Cook until golden brown on both sides, about 6-7 minutes per side.
- Remove the chicken, and in the same skillet, add butter and sauté the onions and garlic until softened.
- Add the mushrooms and cook until browned.
- Pour in the Madeira wine and chicken broth, scraping up any browned bits from the pan.
- Add the chicken back to the skillet, cover, and simmer for 15-20 minutes until the chicken is cooked through.
- Serve hot, garnished with fresh parsley.
