Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste


Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat and add the chicken. Cook until golden brown on both sides, about 6-7 minutes per side.
  3. Remove the chicken, and in the same skillet, add butter and sauté the onions and garlic until softened.
  4. Add the mushrooms and cook until browned.
  5. Pour in the Madeira wine and chicken broth, scraping up any browned bits from the pan.
  6. Add the chicken back to the skillet, cover, and simmer for 15-20 minutes until the chicken is cooked through.
  7. Serve hot, garnished with fresh parsley.
