  • 1 large egg

  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream together butter, brown sugar, and granulated sugar until light.
  4. Beat in egg and vanilla extract until well combined.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in grated carrots, walnuts, and raisins.
  7. For the filling, mix cream cheese and powdered sugar until smooth.
  8. Drop tablespoon-sized dough on a baking sheet, flatten slightly, place cream cheese filling in the center, and top with another piece of dough.
  9. Bake for 12-15 minutes or until golden brown.
  10. Allow to cool before serving.

Notes
