- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, cream together butter, brown sugar, and granulated sugar until light.
- Beat in egg and vanilla extract until well combined.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in grated carrots, walnuts, and raisins.
- For the filling, mix cream cheese and powdered sugar until smooth.
- Drop tablespoon-sized dough on a baking sheet, flatten slightly, place cream cheese filling in the center, and top with another piece of dough.
- Bake for 12-15 minutes or until golden brown.
- Allow to cool before serving.
Notes
- For extra flavor, add a pinch of ginger to the cookie dough.
- Use chopped pecans instead of walnuts for a different taste.
