Description
A moist and flavorful quick bread made with fresh carrots, zucchini, and apples, spiced with cinnamon and nutmeg for the perfect year-round treat.

- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 2 large eggs
- ½ cup vegetable oil or melted coconut oil
- ¾ cup granulated sugar or brown sugar
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1 cup grated zucchini (squeezed dry)
- 1 cup grated apple (peeled or unpeeled)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment.
- In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another large bowl, beat eggs, oil, sugar, and vanilla until smooth.
- Gradually mix dry ingredients into wet ingredients just until combined.
- Fold in grated carrots, zucchini, apple, and nuts if using.
- Pour batter into pan and bake for 55–65 minutes or until a toothpick comes out clean.
- Cool in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For gluten-free, use a 1:1 gluten-free flour blend.
- For vegan, use flax eggs and plant-based oil.
- Squeeze zucchini well to avoid excess moisture.
