Description

A delicious and vibrant dish combining caramelized butternut squash, sweet potatoes, and feta cheese, topped with a cranberry-honey glaze, perfect for any meal.


Ingredients

  • 1 medium butternut squash
  • 2 sweet potatoes
  • 2 cups Brussels sprouts
  • 3 carrots
  • 1 cup crumbled feta cheese
  • 1/2 cup walnuts, chopped
  • 1/3 cup cranberry-honey glaze


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash and sweet potatoes.
  3. Trim the ends of the Brussels sprouts and slice in half.
  4. Peel and slice the carrots.
  5. In a large bowl, combine all vegetables and toss with olive oil, salt, and pepper.
  6. Spread the vegetables on a baking sheet and roast for 25-30 minutes until caramelized.
  7. Remove from the oven and drizzle with cranberry-honey glaze, then sprinkle with feta and walnuts before serving.
