Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 teaspoons Cajun seasoning
  • 1 cup shredded cheese
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, brown the ground beef with onions and garlic.
  4. Add cooked rice, tomatoes, Cajun seasoning, salt, and pepper to the skillet.
  5. Stuff the bell peppers with the mixture and place them in a baking dish.
  6. Top with shredded cheese.
  7. Bake for 30 minutes or until the peppers are tender and the cheese is melted.

Notes

  • For extra flavor, add hot sauce to the meat mixture.
