Ingredients

  • 1 tablespoon Cajun seasoning
  • 4 medium potatoes

  • 1/2 cup milk
  • 1 pound shrimp, peeled and deveined
  • 1 bell pepper (any color, sliced)
  • 1 zucchini, sliced
  • 1 teaspoon olive oil
  • Salt and pepper to taste


Instructions

  1. Season the salmon fillets with Cajun seasoning.
  2. Boil the potatoes until tender, then drain.
  3. Add butter and minced garlic to the potatoes, mash, and mix in milk to achieve desired consistency.
  4. In a pan, heat olive oil and sauté the bell pepper and zucchini until tender.
  5. Add the shrimp to the pan and cook until pink and opaque.
  6. Serve the Cajun salmon alongside the garlic mash and shrimp veggie medley.
