Ingredients

  • 2 large carrots, sliced
  • 3 celery stalks, chopped
  • 1 large onion, diced
  • 1 small head of green cabbage, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 6 cups vegetable or chicken broth
  • 2 tsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes (optional)
  • Salt & pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  • Prepare the Vegetables – Wash and chop all the ingredients for quick cooking.
  • Sauté the Aromatics – Heat olive oil in a pot, then cook the onions, garlic, and bell peppers until fragrant.
  • Add the Vegetables & Seasoning – Stir in the cabbage, carrots, and celery along with the herbs and spices.
  • Pour in the Broth & Tomatoes – Add the vegetable or chicken broth and diced tomatoes. Stir well.
  • Simmer & Taste – Bring the soup to a boil, then reduce to low and let it simmer for 25–30 minutes until vegetables are tender.
  • Serve & Garnish – Ladle into bowls and top with fresh parsley if desired.

Notes

  • Adjust seasoning to taste—more herbs for depth, red pepper flakes for heat.
