- 4 slices turkey bacon, diced

- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
- Add the onion and garlic, and sauté until softened.
- Stir in the broccoli and cook for another 2-3 minutes.
- Add the vegetable broth and bring to a boil.
- Reduce heat and let it simmer until the broccoli is tender, about 10 minutes.
- Using an immersion blender, purée the soup until smooth.
- Stir in the cheddar cheese and heavy cream. Cook until the cheese is melted.
- Season with salt and black pepper to taste.
- Serve hot.
