Description

Ingredients

  • 4 slices turkey bacon, diced
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups broccoli florets
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the onion and garlic, and sauté until softened.
  3. Stir in the broccoli and cook for another 2-3 minutes.
  4. Add the vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer until the broccoli is tender, about 10 minutes.
  6. Using an immersion blender, purée the soup until smooth.
  7. Stir in the cheddar cheese and heavy cream. Cook until the cheese is melted.
  8. Season with salt and black pepper to taste.
  9. Serve hot.
