Ingredients

- 4 cups fresh broccoli florets (bite-sized)
- 1/2 cup red onion, finely diced
- 1/2 cup shredded carrots
- 1/2 cup dried cranberries or raisins
- 1 cup roasted cashews (salted or unsalted)
- 1/2 cup cooked bacon, crumbled (optional)
- 1/2 cup shredded cheddar cheese (optional)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or sugar
- Salt and black pepper, to taste
Instructions
- Wash and dry broccoli florets. Optional: Blanch in boiling water for 30 seconds, then cool in ice water and pat dry.
- In a large mixing bowl, combine broccoli, onion, carrots, cranberries, cashews, bacon, and cheese.
- In a small bowl, whisk together mayonnaise, vinegar, honey, salt, and pepper until smooth.
- Pour dressing over the salad and toss to coat.
- Cover and refrigerate for at least 30 minutes before serving.
