Description

A delicious and healthy broccoli and cauliflower salad with turkey bacon that makes for a great side dish or light meal.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup cooked turkey bacon, chopped
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine broccoli, cauliflower, turkey bacon, red onion, and cheddar cheese.
  2. In a separate bowl, mix together Greek yogurt, apple cider vinegar, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
