A delicious and healthy broccoli and cauliflower salad with turkey bacon that makes for a great side dish or light meal.
Ingredients

- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 cup cooked turkey bacon, chopped
- 1/2 cup diced red onion
- 1/2 cup shredded cheddar cheese
- 1/2 cup Greek yogurt
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine broccoli, cauliflower, turkey bacon, red onion, and cheddar cheese.
- In a separate bowl, mix together Greek yogurt, apple cider vinegar, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.

- For added crunch, consider adding sunflower seeds or chopped nuts.
