- 1 sheet puff pastry, thawed
- 4 oz Brie cheese, sliced or cubed
- 1/2 cup fresh blackberries
- 2 tablespoons honey, divided
- 1 tablespoon fresh rosemary, chopped
- 1 egg, beaten (for egg wash)
- Powdered sugar, optional
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out puff pastry to a 10×12-inch rectangle on a lightly floured surface.
- Spread brie pieces evenly, add blackberries, sprinkle rosemary, and drizzle with 1 tbsp honey.
- Roll pastry from the long side into a tight log, then slice into ½-inch thick rounds.
- Place swirls on the baking sheet cut-side up. Brush with egg wash.
- Bake for 15–18 minutes until golden and puffed.
- Drizzle with remaining honey and dust with powdered sugar, if using. Serve warm or at room temperature.
Notes
- Chill the rolled log before slicing for cleaner cuts.
- Swap brie with goat cheese or camembert for variation.
- Raspberries or blueberries also work well here.
- Add a pinch of flaky sea salt before baking for contrast.
