Ingredients

  • 1 sheet puff pastry, thawed
  • 4 oz Brie cheese, sliced or cubed
  • 1/2 cup fresh blackberries
  • 2 tablespoons honey, divided
  • 1 tablespoon fresh rosemary, chopped
  • 1 egg, beaten (for egg wash)
  • Powdered sugar, optional

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out puff pastry to a 10×12-inch rectangle on a lightly floured surface.
  3. Spread brie pieces evenly, add blackberries, sprinkle rosemary, and drizzle with 1 tbsp honey.
  4. Roll pastry from the long side into a tight log, then slice into ½-inch thick rounds.
  5. Place swirls on the baking sheet cut-side up. Brush with egg wash.
  6. Bake for 15–18 minutes until golden and puffed.
  7. Drizzle with remaining honey and dust with powdered sugar, if using. Serve warm or at room temperature.

Notes

  • Chill the rolled log before slicing for cleaner cuts.
  • Swap brie with goat cheese or camembert for variation.
  • Raspberries or blueberries also work well here.
