- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened cocoa powder
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 4 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- ½ cup chocolate chips
- ½ cup milk
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mix graham cracker crumbs, cocoa powder, granulated sugar, and melted butter until combined. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and powdered sugar until smooth. Add eggs, one at a time, mixing well after each addition. Stir in sour cream and vanilla extract.
- Pour cream cheese mixture over the crust in the springform pan.
- Bake for 60 minutes or until the center is set. Let cool completely.
- In a saucepan, heat heavy cream and chocolate chips over low heat until melted and smooth. Pour over the cooled cheesecake.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a richer chocolate flavor, use dark cocoa powder.
- Let the cheesecake sit at room temperature for 30 minutes before slicing.
