  • 1 tablespoon coarsely ground black pepper
  • 1 tablespoon brown sugar
  • 2 tablespoons oil
  • 2 cups sliced mushrooms (button or cremini)
  • 1/2 onion, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ginger, minced
  • Green onions for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Marinate chicken in soy sauce and cornstarch for 10 minutes.
  2. Whisk remaining soy sauce, oyster sauce, hoisin, vinegar, sugar, and black pepper into a sauce.
  3. Heat oil in a skillet or wok and stir-fry chicken until cooked. Remove and set aside.
  4. Sauté onions, mushrooms, garlic, and ginger until tender.
  5. Return chicken to the pan, pour in sauce, and cook until thickened (2–3 mins).
  6. Garnish with green onions and serve over rice or noodles.
