- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder
- 1 cup sour cream
- 2 cups pitted cherries (fresh or frozen)
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- 1 ounce chocolate shavings for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix the chocolate cookie crumbs with melted butter until combined.
- Press the crumb mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and cocoa powder until fully incorporated.
- Fold in the sour cream until smooth.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake in the preheated oven for 60-70 minutes, or until the center is set but still slightly jiggly.
- Remove from the oven and let cool completely, then refrigerate for at least 4 hours or overnight.
- Before serving, whip the heavy whipping cream with powdered sugar until soft peaks form.
- Spread the whipped cream over the cheesecake and top with cherries and chocolate shavings.
