Description

This Black Forest Cheesecake is a delightful combination of rich chocolate and creamy cheesecake, topped with luscious cherries and whipped cream, creating a symphony of flavors that indulges the senses.


Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup cocoa powder
  • 1 cup sour cream
  • 2 cups pitted cherries (fresh or frozen)
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 ounce chocolate shavings for garnish


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix the chocolate cookie crumbs with melted butter until combined.
  3. Press the crumb mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
  5. Add in the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract and cocoa powder until fully incorporated.
  7. Fold in the sour cream until smooth.
  8. Pour the cheesecake mixture over the crust and smooth the top.
  9. Bake in the preheated oven for 60-70 minutes, or until the center is set but still slightly jiggly.
  10. Remove from the oven and let cool completely, then refrigerate for at least 4 hours or overnight.
  11. Before serving, whip the heavy whipping cream with powdered sugar until soft peaks form.
  12. Spread the whipped cream over the cheesecake and top with cherries and chocolate shavings.

  • For a gluten-free version, use gluten-free cookies for the crust.
