Description

A delicious and nutritious Black Eyed Pea Salad featuring turkey bacon.


Ingredients

  • 2 cups black eyed peas, cooked
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. In a large bowl, combine the black eyed peas, cherry tomatoes, red onion, bell pepper, and turkey bacon.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
