Ingredients

  • 1 lb shrimp, peeled and deveined
  • ½ cup cornstarch
  • ½ cup all-purpose flour
  • Salt and pepper, to taste
  • ½ cup buttermilk (or milk + vinegar)
  • Vegetable oil for frying
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 12 tbsp Sriracha
  • 1 tbsp honey (optional)
  • 68 small flour or corn tortillas
  • 2 cups shredded cabbage
  • Chopped green onions or cilantro
  • Lime wedges for serving

Instructions

  1. In a bowl, whisk mayonnaise, sweet chili sauce, Sriracha, and honey for the Bang Bang sauce. Set aside.
  2. Pat shrimp dry, season lightly, and soak in buttermilk for 10 minutes.
  3. Mix cornstarch and flour in a shallow dish. Dredge shrimp in mixture.
  4. Heat oil to 350°F in a skillet. Fry shrimp in batches 2–3 minutes per side until golden.
  5. Drain on paper towels, then toss shrimp in Bang Bang sauce.
  6. Warm tortillas, layer with cabbage, add shrimp, and garnish with onions/cilantro. Serve with lime wedges.
