Ingredients

  • 2 ripe bananas, mashed

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat together the cream cheese and sugar until smooth. Add vanilla and mix well.
  4. Add the eggs one at a time, mixing well after each addition. Fold in the mashed bananas.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 60-70 minutes, or until the center is set but still slightly jiggly.
  7. Allow the cheesecake to cool, then refrigerate for at least 4 hours or overnight.
  8. Before serving, drizzle with caramel sauce and sprinkle chopped nuts on top.
