- 4 eggs
- 4 strips turkey bacon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese (optional)
- 1 tablespoon chopped chives (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine cottage cheese, eggs, salt, and pepper.
- Crisp the turkey bacon in a skillet, then chop it into bite-sized pieces.
- Add the bacon to the cottage cheese mixture and stir well.
- Pour the mixture into a greased baking dish and top with shredded cheese and chives if using.
- Bake in the preheated oven for 25-30 minutes or until the eggs are set and lightly golden.
- Let cool for a few minutes before serving.

- For a spicy kick, add diced jalapeños to the mixture.
