This creamy avocado pasta salad is made with ripe avocado, Greek yogurt, lemon juice, fresh herbs, and crisp veggies. It’s light, healthy, and full of flavor – perfect for picnics, potlucks, or meal prep.
Ingredients

- 8 oz rotini or bowtie pasta
- 1 ripe avocado
- 1/4 cup plain Greek yogurt or sour cream
- 1 garlic clove
- Juice of 1 lemon or lime
- 2 tbsp olive oil
- 1/4 cup fresh basil or cilantro
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- Salt and pepper, to taste
- Optional: 1/4 cup crumbled feta or shredded Parmesan
Instructions
- Cook pasta in salted water until al dente. Drain and rinse under cold water.
- In a blender, combine avocado, yogurt, garlic, lemon juice, olive oil, herbs, salt, and pepper. Blend until smooth.
- In a large bowl, toss cooled pasta with the dressing.
- Fold in tomatoes, cucumber, and cheese if using.
- Chill for at least 30 minutes before serving.
Notes
- Use ripe but firm avocados for best results.
- Add grilled chicken or shrimp for extra protein.
- Swap basil with mint or dill for a fresh twist.
- Best served the same day to preserve avocado color.
