- 4 boneless, skinless chicken breasts
- 1 cup asparagus, trimmed and chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- salt to taste
- pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the chopped asparagus, mozzarella cheese, garlic powder, Italian seasoning, salt, and pepper.
- Slice a pocket into each chicken breast and stuff with the asparagus and mozzarella mixture.
- Heat olive oil in a skillet over medium-high heat. Sear each stuffed chicken breast for 2-3 minutes on each side.
- Transfer the chicken to a baking dish and bake for 25-30 minutes or until cooked through.
- Remove from oven and let rest for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken breasts in herbs and spices before stuffing.
- Feel free to substitute other vegetables like spinach or bell peppers.
