Description

A delicious and healthy recipe for asparagus and mozzarella stuffed chicken that the whole family will love.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup asparagus, trimmed and chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chopped asparagus, mozzarella cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Slice a pocket into each chicken breast and stuff with the asparagus and mozzarella mixture.
  4. Heat olive oil in a skillet over medium-high heat. Sear each stuffed chicken breast for 2-3 minutes on each side.
  5. Transfer the chicken to a baking dish and bake for 25-30 minutes or until cooked through.
  6. Remove from oven and let rest for 5 minutes before serving.

Notes

  • For extra flavor, marinate the chicken breasts in herbs and spices before stuffing.
  • Feel free to substitute other vegetables like spinach or bell peppers.
