- ¾ cup buttermilk
- 1 large egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 1 cup peeled, finely diced apples
- For coating: ½ cup granulated sugar, 1 tsp cinnamon, 3 tbsp melted butter
- Optional glaze: 1 cup powdered sugar, 2–3 tsp milk, ½ tsp vanilla extract
Instructions
- Preheat your waffle iron and grease it lightly.
- Whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
- In another bowl, mix buttermilk, egg, melted butter, and vanilla extract.
- Combine wet and dry ingredients until just mixed. Fold in diced apples.
- Pour batter into waffle maker and cook for 3–5 minutes until golden brown.
- Brush with melted butter and coat in cinnamon sugar or drizzle with glaze.
- Let cool slightly and serve warm.
Notes
- Use Granny Smith or Honeycrisp apples for best results.
- Make them mini by using a small waffle maker.
