- 2 pounds fresh beets
- 1 cup sugar
- 1 cup apple cider vinegar
- 1 teaspoon salt
- 1 teaspoon ground cloves
- 1 teaspoon cinnamon
Instructions
- Wash the beets thoroughly and trim the tops and tails.
- Boil the beets in salted water until tender, about 30-40 minutes.
- Once cooked, drain and let cool slightly before peeling the skin off.
- Slice the beets and set aside.
- In a saucepan, combine sugar, vinegar, salt, cloves, and cinnamon. Bring to a boil and stir until sugar dissolves.
- Add the sliced beets to the saucepan and simmer for 10 minutes.
- Transfer the beets and pickling liquid into sterilized jars and seal tightly.
- Allow to cool, then refrigerate for at least 24 hours before serving.
