- 2 large eggs
- 1 ½ tsp vanilla extract
- 1 ½ cups all-purpose flour
- ⅓ cup light brown sugar
- 1 tsp ground cinnamon
- 2 medium apples, peeled and chopped (Granny Smith or Honeycrisp)
- ⅔ cup granulated sugar
- ½ cup unsalted butter, softened
- 1 ¾ tsp baking powder
- ½ cup milk
- For the glaze: ½ cup powdered sugar, 1–2 tsp milk, few drops vanilla extract (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- Mix brown sugar and cinnamon in a small bowl; set aside.
- Cream butter and granulated sugar until fluffy. Add eggs one at a time, then stir in vanilla.
- Whisk flour and baking powder together. Alternate adding dry ingredients and milk to the butter mixture.
- Pour half the batter into the pan. Top with half the apples and cinnamon sugar, pressing lightly. Repeat layers and swirl with a knife.
- Bake for 50–60 minutes or until a toothpick comes out clean. Cool 10–15 minutes, then transfer to a rack.
- Mix glaze ingredients until smooth and drizzle over cooled bread.
